Verjus, the juice of unripe apples, replaces the citrus in this whiskey sour variation.
1.5 oz Bourbon
1 oz Sauk Farm Honeycrisp Apple Cider
1 oz Sauk Farm Apple Verjus
1 oz simple syrup
1 Egg white*
Sprinkle of cinnamon
Add all ingredients except for ice to a cocktail shaker and shake vigorously for 30 seconds.
Add the ice and shake for another 30 seconds.
Strain into a glass and spoon any remaining foam on top.
Sprinkle lightly with cinnamon.
*The egg white adds an amazing texture and foam, but if you’re avoiding raw egg or animal products you can just leave it out and or substitute 1 tbsp of aquafaba, which is the liquid from canned garbanzo beans. Shake the aquafaba alone in the shaker for 30 seconds before adding the other ingredients, then follow the rest of the recipe.
