Apple Verjus Bar

INGREDIENTS

Makes approx. 24 bars

  • 1 cup butter, melted

  • Olive oil or butter for greasing the pan

  • 1 3/4 cups flour, plus 1/4 cup Sauk Farm Apple Powder

  • An additional 1/3 cup flour set aside

  • 1 cup confectioners' sugar (plus a little extra for dusting)

  • a pinch of salt

  • 4 large eggs

  • 1 cup granulated sugar

  • 3/4 cup Sauk Farm Apple Verjus

DIRECTIONS

​

  • Heat oven to 350 degrees, and grease a 9 x 13 x 2 inch pan with olive oil.

 

  • Whisk together the 1 3/4 cups flour, 1/4 cup Sauk Farm Apple Powder, 1 cup confectioners' sugar, and salt into a medium size bowl. Once mixed, pour in the 1 cup of melted butter and stir until evenly incorporated. Transfer to the pan, and pat out mixture evenly, adding to the walls of the pan for a nice crust.

 

  • Bake until golden brown, about 20 minutes.

  • Remove from oven, and set to 300 degrees. Whisk together eggs and granulated sugar until well combined. Add the remaining 1/3 cup flour and the Sauk Farm Apple Verjus and stir well. Pour the mixture over the crust layer and pop back in the oven until just set; about 30 minutes.

  • Remove from oven again, and allow to completely cool in the pan, then cut into 24 bars. Sprinkle the remaining confectioners' sugar over the top before serving. Enjoy!
