Apple Verjus Bar
INGREDIENTS
Makes approx. 24 bars

1 cup butter, melted

Olive oil or butter for greasing the pan

1 3/4 cups flour, plus 1/4 cup Sauk Farm Apple Powder

An additional 1/3 cup flour set aside

1 cup confectioners' sugar (plus a little extra for dusting)

a pinch of salt

4 large eggs
-
1 cup granulated sugar

3/4 cup Sauk Farm Apple Verjus

DIRECTIONS

Heat oven to 350 degrees, and grease a 9 x 13 x 2 inch pan with olive oil.

Whisk together the 1 3/4 cups flour, 1/4 cup Sauk Farm Apple Powder, 1 cup confectioners' sugar, and salt into a medium size bowl. Once mixed, pour in the 1 cup of melted butter and stir until evenly incorporated. Transfer to the pan, and pat out mixture evenly, adding to the walls of the pan for a nice crust.

Bake until golden brown, about 20 minutes.

Remove from oven, and set to 300 degrees. Whisk together eggs and granulated sugar until well combined. Add the remaining 1/3 cup flour and the Sauk Farm Apple Verjus and stir well. Pour the mixture over the crust layer and pop back in the oven until just set; about 30 minutes.

Remove from oven again, and allow to completely cool in the pan, then cut into 24 bars. Sprinkle the remaining confectioners' sugar over the top before serving. Enjoy!
