Rosemary French 75
Verjus, the juice of unripe apples, replaces the lemon in this classic cocktail, and fresh rosemary jives with the botanicals in the gin.

INGREDIENTS

1 1/2 oz Gin
-
3/4 oz Simple syrup
-
2 to 3 oz Sparkling wine (enough to top the glass)
-
2 Sprigs of rosemary
-
Ice

PREPARATION
1. Add the gin, verjus, simple syrup, and a 2 inch sprig of rosemary to a cocktail shaker.
​
2. Shake vigorously for 30 seconds.
​
3. Strain into a champagne flute and top with sparkling wine
​
4. Garnish with a rosemary sprig.
